Cooking 101 - Peppermint Crunch Cookies

IS IT TOO GOOD TO BE TRUE?! After I wiped the tears from my eyes in the baking aisle of the store, blinked back the blurriness, and came to my senses, it really was true that the candy-lovin' geniuses out there FINALLY made peppermint chips for the holidays! I quickly snagged a couple of bags (gonna go back and get more) with NO idea what to do with them...but it didn't matter!

The recipe is on the back of the bag, but here it is:

(NOTE: These are kind of thin and soft - I like mine to be less thin so if you're a "thicker" cookie gal then scale back a little on the butter. )

2 sticks butter, softened
1 c. brown sugar, packed
1/3 c. granulated sugar
1 large egg
2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
1 3/4 c. flour
1 c. old fashioned oats
1 c. sweetened, shredded coconut
1 1/4 c. coarsly chopped pecans (or whatever nut you like)
1 1/2 c. Andes Peppermint Crunch Baking Chips

Preheat oven to 300 degrees (I used 325). Using an electric mixer, cream butter and sugars until fluffy (about 3 minutes). Beat in egg and vanilla. On low speed, add baking soda, salt and then flour. Mix completely. Stir in oats, coconut, pecans, and peppermint chips.

These cookies spread WAY out, so drop small spoonfuls of dough onto cookie sheet (about 1 Tbsp). Bake for 12-15 minutes or until edges are slightly browned and middle is still gooey. Remove from cookie sheet and let cool.

AND THEN EAT ABOUT A HUNDRED OF THEM with some PEPPERMINT COCOA!

I really, really, really LOVE the pictures you take. It's like you work for a magazine and know JUST how to set up yummy, beautiful creative shots. I honestly don't know how you do it EVERY time. I love your photos.

AND---I love the cookies. MAN they were delicious!

i went to 3 different stores to find the peppermint chips, but with no luck! where did you get them? my mouth has been watering ever since i read your post. i can't wait to make these cookies! -hayley

I found them too! Have you ever made white chocolate popcorn? I incorporated these for a peppermint version:
1 bag pop-secret homestyle popcorn
1/2 bag white chocolate chips
1/4 bag peppermint chips
Melt chocolate in the microwave and then pour over the popped popcorn. I usually put mine in the freezer so it hardens quick enough for me to change a load of laundry and then sit down to eat! The big bag of popcorn can be used for a small crowd (or 2 people) but I like to use the snack size bags, with less chocolate, and eat it all by myself. Glorious peppermint chips.

I'm looking for those Andes mints too. I looked in 2 stores. Maybe I can go online to search that way? Ofcourse it looks like a speciality and after Christmas I won't be able to find it.

I got a bag of those and made a yummy desert with them. I cut an angel food cake into three layers and covered each layer with cool whip and a layer of the mints inside each layer. I sprinkled them on top afterwards and then drizzled chocolate syrup over the top. VERY YUMMY!

I am so with you on the love of peppermint! I just made a batch of chocolate cookies with these for a cookie exchange, and they are really tasty! I think it would be even tastier with a bowl of peppermint ice-cream! I love your blog, btw. You actually inspired me to crochet a scarf...although it hasn't been as easy for me as you made it look!

Thanks for posting this. I saw these in my Walmart the other day but didn't know if they would be good or not. I will have to go and get me a bag and try them out.
