Cooking 101 - Mazurka Bars

First of all, could there be anything more beautiful than the colors of FRUIT?! Look at these colors! Nature truly has the most YUMMY colors!!

Okay, back to the bars. My friend Kadie made these the other day and they are SO GOOD. And, if you can ignore butter like I can, I seriously think these could be considered a health food. Oats, berries, fruit, whole wheat flour...it doesn't get any better than this, girls.

Because I'm a little "slow" I called these Berzerka Bars for the longest time but it FITS, right? I went completely berzerk over these because it's like having a homemade granola bar with fruit on top. Thanks, Kadie, for introducing yet ANOTHER amazing dessert I'm going to have to try hard to avoid...

MAZURKA BARS

(I doubled this recipe to fit in my large 11 x 15 pan)

Preheat oven to 325 degrees.

2 c. oats
1 c. whole wheat flour
1 c. dark brown sugar (or light brown - whatever you have)
1/2 c. coconut
1/2 c. chopped walnuts (I used pecans)
1/2 t. baking soda
1/4 t. salt
1 1/2 sticks butter, melted
1 t. vanilla

Mix all ingredients together and press into a greased square pan. Top with fresh sliced peaches, berries, or whatever you like. Press the fruit lightly into the crumb mixture.

Bake at 325 degrees for 40-50 minutes. They should look dry on top.

**For Fall flavors, add some cinnamon and nutmeg and use thinly sliced apples instead of berries. It would also be fun to add mini chocolate chips to the mixture, too!

Okay, so I don't know if I'm just really challenged, but I couldn't get this recipe to work for me. Everything tasted great, but the base wouldn't stick together. The minute I even try to take it out of the pan everything crumbles. Maybe I didn't press it together hard enough or something. I don't know, maybe next time I'll try it with more butter or something because it was too dry to stick. Thanks though, I have been enjoying them.

Wow I am VERY happy at the moment. I've been searching for a copycat recipe for the Savannah bars at Great Harvest Bread company, and this looks exactly like it. Thanks so much!
