While I had a house full of sickies, and while I cleaned and took care of people, I had this burning desire for....No Bake Cookies...??? Honestly--who doesn't love a No-Bake? I'm embarassed to admit that I devoured *ahem* a lot of these. They're freakishly good.
And since I had these cute little paper wrappers, I thought I'd try making my cookies into an oblong shape--and I love it! What a fun way to package and give your cookies away! {gasp!}
CLASSIC NO-BAKE COOKIES:
Original recipe from: One More Moore
1/2 C. Butter
2 C. Sugar
1/2 C. Milk
4 T. Cocoa powder
1/2 C. Crunchy peanut butter (I love Skippy All-Natural Super Chunk...no hydroginated oil)
3 1/2 C. Quick oats
2 T. Vanilla
Combine butter, sugar, milk, and cocoa powder in a medium saucepan; cook on medium-high heat and bring it to a boil. Boil for one minute.
Stir in peanut butter, oats, and vanilla. Spoon onto waxed paper and let cool for a few hours.
And then try hard not to eat all of them!!
When I was 12-16 we lived in Alberta and had a upright freezer..so I made these cookies at least once a week...man I loved those cookies. I should try again..just no freezer and I prefer them out of the freezer.

ReplyDeleteHave you ever tried "No Bake Tropical Cookies"?? They are SO good. I have to give them away or I eat them all.
ReplyDelete(It's really easy to just double the recipe since that uses the whole bag of white chocolate chips. Plus then there is more to share. And I always put extra lime in because it's tasty.)
1 cup white chocolate chips
5 tablespoon butter
16 large marshmallows
1 tablespoon fresh lime juice
2 teaspoon grated lime zest
1 teaspoon ground ginger
2 cup quick-cooking oats, uncooked
1 cup sweetened coconut flakes
Melt the white chocolate chips with the butter, marshmallows, and lime juice over Low heat in a large saucepan, stirring until blended and smooth.
Remove from the heat. Cool 5 minutes.
Stir in the lime zest, ginger, oats, and coconut.
Working quickly, drop by rounded teaspoons onto wax-paper lined baking sheets. Cover loosely with plastic wrap and refrigerate 2-3 hours.
Let stand for 15 minutes before serving.
I hope you like them. When they are cold, they have a caramel consistency! Yum!

good call. no bake cookies are the best! i lived in a small eskimo village for two years where my husband and i were dorm parents at a boarding school... and what was the absolute favorite dessert of my dorm kids, you guessed it, NO BAKE COOKIES!
